red velvet cake

turned out to be quite tasty but not very red. the batter was a beautiful pink before it went in the oven, but came out a light brown. despite the cocoa*, it tasted more like wedding cake than anything else.

in sum: very good, but not at all what i was going for. not sure it was worth the super duper complicated recipe that required 4 bowls and 2 siftings and much beating and folding in of vinegar.

i’ve heard tell of a chocolate beet cake which might be my second try.

*which, clearly, did not get distributed quite so evenly between the two cake pans. you can see 2 darker layers.
